Kim Cross, writing for Southern Living magazine, labels Chef Noble as "The Classic" in her desciption of the chefs who are the "movers and shakers" in Charlotte's restaurant culture.   She defends her label with the following description of Chef Noble and his cuisine:

 

"Forgoes fads for exquisite, simple, and timeless dishes.  His approach to food is "Let it be.  Don't mess with it."  The flavors shine through."
